Apricot, pear, peach and apple compote Apricot, pear, peach and apple compote
  • Preparation: 5 minutes; cooking 10 minutes
  • Provides beta-carotene, fibre and vitamin C

You will need:

3 ready to eat dried apricots or fresh apricots, chopped
1 sweet eating apple, peeled, cored and chopped
1 large, ripe pear, peeled, cored and chopped
1 large, ripe peach or plum, peeled, cored and chopped.

How to make it:

Place all the chopped fruit in a saucepan and simmer with a little water until soft - about 8-10 minutes.
Blend the mixture to a puree of the desired consistency.
Variation: for a creamier finish to this compote, mix 2 tablespoons of baby rice with 4 tablespoons of breast milk or formula and blend this with the fruit puree.
